Meatless Friday Recipe: Curried Sweet Potato and Apple Soup

Curried Sweet Potato and Apple Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, sliced
  • 1 tablespoon finely chopped fresh ginger
  • 1 teaspoon curry powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 4 cups water
  • 1 1/4 pounds sweet potatoes, peeled and cut into chunks
  • 3 large granny smith apples, peeled, cored, and cut into chunks
  • 1/2 cup chopped fresh cilantro
Directions
1.Heat the oil in a large saucepan or Dutch oven over medium heat. Add the onion and garlic and cook, stirring occasionally, for 5 minutes, or until tender.
2.Add the ginger, curry powder, cumin, salt, and cinnamon. Cook, stirring constantly, for 1 minute. Add the water, sweet potatoes, and apples and bring to a boil over high heat. Reduce the heat to low, cover, and simmer, stirring often, for 20 minutes, or until the sweet potatoes are very tender.
3.In a food processor or blender, puree the soup in batches until very smooth, pouring each batch into a bowl. Reheat if necessary. Stir in the cilantro.
